Why are our BBQ ribs so special? Why do so many people return to us for this dish? What is BBQ (barbecue) anyway? We reveal a few secrets.

Our iconic BBQ ribs are worth coming from even the farthest reaches of the Opole region, although we must admit that many of our guests come from much further afield. Our restaurant, as well as our hotel, are located in the heart of the Opole region, close to many tourist attractions of the Opole Voivodeship among others Moszna Castle, St. Anne's Mountains, Robot Factories or Opole Village Museum.
What does the BBQ in the name of our BBQ ribs mean?
BBQ (barbecue) is a shorthand term for a certain type of grilling combined with smoking, i.e., smoke produced by slowly burning fruit trees, for example. The method used is called "Low & Slow," or, in Polish, "Low and Slow." Low refers to the temperature at which BBQ meats are cooked, which is approximately 120 degrees Celsius. Slow refers to the time at which such meats are cooked, which is very slowly but for a long time, due to the unusually low temperature for so-called grilling.

So, to sum up, BBQ is grilling/roasting at a relatively low temperature in the smoke of trees, in our case in the smoke of fruit trees.
When using the BBQ method, it's important to remember that the entire roasting/grilling process should be done slowly, maintaining a relatively low temperature. This allows the proteins in the meat to slowly coagulate, which then slowly reacts with the carbohydrates (the so-called Millard reaction). This process results in a beautiful, brown layer on the meat's surface and a characteristic glaze. The key effect, however, is the flavor we call umami.
BBQ Ribs are a way of cooking, not a BBQ sauce.
We recommend paying close attention to a common misconception in Poland: the presence of a dish with the same name, "BBQ ribs," but having nothing to do with BBQ. These ribs or other meats are called BBQ only because they are served with BBQ sauce, which is a gross exaggeration and even misleading. BBQ sauce is merely an addition; to call ribs BBQ ribs, they must be prepared using the BBQ method described above, a process that is long, difficult, and labor-intensive.
Our restaurant believes that nothing difficult is alien to us, and our ribs are prepared using the true BBQ method, straight from the United States, where this method originated. We don't cut corners, we don't shorten the process—because the result is completely different and has nothing to do with BBQ.
As a result of the entire BBQ process, our ribs arrive at our tables with exceptionally tender, aromatic, and fragrant ribs! We also pay attention to the marinade we use, a proprietary marinade perfectly suited to American BBQ. The whole thing is finished with our signature sauce.
